Ganachaud 226 rue des Pyrénées, 20e. Although father Ganachaud has left the business, his three daughters continue his recipes, and the bread is still out of this world. Start the day with a pain biologique and you'll live a hundred years, guaranteed. M° Gambetta. Tues–Sat 7.30am–8pm.

Legay Choc 45 rue Sainte-Croix-de-la-Bretonnerie, 4e. The two brothers who opened this bakery a year or two ago have already built up a formidable reputation for excellent bread and pastries. M° Hôtel-de-Ville. Daily 7.30am–8pm except Wed.

Poilâne 8 rue du Cherche-Midi, 6ewww.poilane.fr. The source of the famous "Pain Poilâne" – a bread baked using traditional methods (albeit ramped up on an industrial scale) as conceived by the late, legendary Monsieur Poilâne himself. M° Sèvres-Babylone. Mon–Sat 7.15am–8.15pm.

Poujauran 20 rue Jean-Nicot, 7e. The shop is exquisite, with its original painted glass panels and tiles, the bread is excellent and so too are the pâtisseries. M° Latour-Maubourg. Tues–Sat 8am–8.30pm.
