In addition to cycling, walking and canoeing, horse-riding is another excellent way to explore the French countryside. Practically every town has an equestrian centre (centre équestre) where you can ride with a guide or unaccompanied, although the most famous and romantic region for riding is the flat and windswept Camargue at the Rhône Delta. Mule-trekking is also coming increasingly into vogue, particularly along the trails of the Pyrenees and Alps.

Hang-gliding and paragliding (a cross between parachuting and hang-gliding) offer a completely different perspective; the best areas for these are the Hautes-Alpes of Provence, the Pyrenees and Corsica. Caving is popular in the limestone caverns of southwest France and along the Spanish border. You'll need to make an arrangement through a local club, which usually organize beginners courses as well as half- or full-day outings.
